Guest guest Posted July 6, 2003 Report Share Posted July 6, 2003 Herbed Goat Cheese With Mixed Greens 8 ounce Goat cheese (log shaped) 3 teaspoons Parsley, chopped 2 teaspoons Chives, snipped 1/2 teaspoon Cracked black pepper 6 cups Mixed (Spring Mix) greens Olive oil White wine vinegar Simply sprinkle the greens with oil and vinegar or use your favorite light vinaigrette. Mix the parsley, chives, and pepper. Roll the cheese in the herbs. Cut into four rounds. Place 1/4 on the greens on salad plates. Place the cheese in the middle.
