Blueberry Muffins

 

Straight from the test kitchens of the

University of Illinois, here's the muffin

voted number one by the soybean study's

Breakfast Club.

 

Each muffin has about 6 grams of soy protein.

 

Ingredients:

 

1 1/2 cups all-purpose flour

3/4 cup soy protein powder

1/2 cup sugar

2 teaspoons baken powder

1/2 teaspoon salt

1 egg

1 cup water

2 1/2 tablespoons vegetable oil.

1/2 cup blueberries

 

Directions:

 

Preheat oven to 400

Spray 12 muffin cups with vegetable spray

In medium bowl, combine dry ingredients.

In another bowl, combine egg, water

and oil.

All egg mixture to flour mixture and stir

until moistened.

Fold berries into batter.

Fill each muffin cup about half-way.

Bake for 25 minutes or until toothpick

inserted in center of muffin comes out clean
