Tomato Soup

(hot or cold)

 

Ingredients:

 

4 lbs. overripe tomatoes peeled,

seeded and cut into eighths

1 large Vidalia or sweet type onion,

peeled, diced

Fresh lemon juice to taste

6 fresh basil leaves

brown sugar to taste

1/4 teaspoon salt (optional)

1 tbs. butter or olive oil

 

Directions:

 

Saute onion in butter or olive oil until soft.

Add tomatoes.

Cover and cook until tomatoes are soft

(about 15 minutes).

Blend mixture in a blender for 1-2 minutes

so that it is not watery.

Empty mixture into a bowl, add lemon juice,

brown sugar, salt and fresh basil.

If serving cold, place in refrigerator for

several hours and serve with croutons.

Remove basil before serving.

If serving hot, heat gently but don't boil
