Guest guest Posted July 15, 2003 Report Share Posted July 15, 2003 Tomato Soup (hot or cold) Ingredients: 4 lbs. overripe tomatoes peeled, seeded and cut into eighths 1 large Vidalia or sweet type onion, peeled, diced Fresh lemon juice to taste 6 fresh basil leaves brown sugar to taste 1/4 teaspoon salt (optional) 1 tbs. butter or olive oil Directions: Saute onion in butter or olive oil until soft. Add tomatoes. Cover and cook until tomatoes are soft (about 15 minutes). Blend mixture in a blender for 1-2 minutes so that it is not watery. Empty mixture into a bowl, add lemon juice, brown sugar, salt and fresh basil. If serving cold, place in refrigerator for several hours and serve with croutons. Remove basil before serving.
