Guest guest Posted September 6, 2003 Report Share Posted September 6, 2003 Tropical California Fruit Salad This recipe is a refreshing combination of juicy apricots, tart kiwi, luscious strawberries and crisp coconut, which is sodium free, and cholesterol free. INGREDIENTS: 2 c Apricots (fresh), pitted and sliced (about 6 to 8) 1-1/2 c Strawberries (fresh), stemmed and halved 1-1/2 c Kiwifruit, pared and sliced 1/4 c Apricot nectar 2 T Coconut flakes, lightly toasted 1 T Fresh mint, finely chopped (or 1 tsp. dried mint, crumbled) PREPARATION METHOD In large bowl combine all ingredients; toss and chill. Serve as a salad, or arrange fruits on wooden skewers for fresh fruit kabobs. Makes 5 (1 cup) servings or 10 kabobs.
