Cranberry Nut Bread

 

Ingredients:

 

2 cups flour

2/3 cup granulated sugar

1-1/2 tsp. baking powder

1/2 tsp. baking soda

3/4 cup orange juice

1/4 cup (1/2 stick) margarine or butter, melted

1/4 cup cholesterol-free egg product

2 tsp. grated orange peel

1 cup chopped cranberries

1/3 cup chopped Walnuts

1/2 cup powdered sugar

2 tsp. water

 

Preparation:

 

Mix flour, granulated sugar, baking powder

and baking soda in large bowl.

Blend orange juice, margarine, egg product

and orange peel; add to flour mixture,

tirring just until blended.

Mix in cranberries and walnuts.

 

Pour batter into bottom-greased 8x4-inch loaf pan.

 

Bake at 350°F for 55 to 60 minutes or until done.

Cool in pan 10 minutes; remove from pan.

Cool completely on wire rack.

Mix powdered sugar and water;

drizzle over cooled loaf.
