Spinach Lasagne

 

1 -32 oz. jar marinara sauce (or spaghetti sauce)

8 -oz. water

8 -oz. can tomato sauce

8 -dried lasagna noodles, uncooked

1 1/2 cups part skim-milk or fat free ricotta cheese

4 oz. shredded part-skim milk mozzarella cheese

(or more if you like it cheesy)

1 -10 oz. thawed and VERY well drained chopped frozen

spinach (I put it in a strainer and use the back

of a spoon to be sure get out all of the moisture.

 

1. Mix together sauces and water.

 

2. Blend spinach with ricotta. Layer a lasagna dish

with 1/4 of the sauce mixture followed by 3 noodles.

 

3. Top noodles with 1/2 of mixture.

 

4. Sprinkle with 1/2 of sauce.

Repeat same for the next layer except

for the remaining mozzarella cheese.

 

5. Top with 2 noodles and pour remaining sauce on top.

 

6. Cover with microwave-safe plastic wrap,

leaving one corner open to allow for venting.

Micro on high for 8 minutes, then reduce power to 50%

(medium) and continue to micro for 20 minutes.

Remove from oven, taking off plastic wrap and sprinkle

lasagna with remaining mozzarella cheese on top.

Allow to sit for 10 to 15 minutes before serving.

Makes 4 rather large servings.

 

Serving Suggestion:

Serve Hot With A HUGE green salad and lots of bread! :-)
