Broccoli Cornbread

Broccoli Cornbread

 

2 sticks margarine or butter

2 pkg. cornbread mix (your choice)

1 pkg. (10 oz) Frozen chopped broccoli, thawed but not

drained

1 onion chopped

1 carton (10 or 12 oz your preference) cottage cheese

4 eggs

1/2 cup shredded cheddar cheese (I use 1 cup)

 

Method:

 

Melt butter in a 9 X 13 pan.

Mix together all other ingredientsEXCEPT cheddar cheese.

(do not drain broccoli)

Pour batter over butter.

Sprinkle with cheddar cheese (Suggestion:

Wait until brown then sprinkle so inside

of cornbread will be done).

Bake at 375 for 30 min or until brown.
