Guest guest Posted December 26, 2003 Report Share Posted December 26, 2003 Fresh Fruit Cocktail This sweet treat contains crunchy apples, fresh pineapple, tangy oranges, and seedless grapes, which are low fat, cholesterol free, and high in the antioxidant Vitamin C. INGREDIENTS: 2 c Apple juice 1 T Lemon juice 1/2 t Grated orange or lemon peel 2 (3-inch) Cinnamon sticks 2 Red Delicious apples, cored and chopped 1-1/2 c Fresh pineapple chopped 1 Orange, peeled and sectioned 1/2 c Seedless grapes PREPARATION METHOD In medium-size saucepan, combine apple juice, lemon juice, orange or lemon peel, and cinnamon sticks. Bring to boil and simmer, uncovered, 10 minutes. Cool to warm; remove cinnamon sticks. In large bowl, combine apples, pineapple, orange, and grapes. Pour cooled syrup over fruit and chill before serving. Makes 4 servings.
