Non soy based 'Meat-loaf' recipe

oh..let me share the one recipe that i use as a 'meat'loaf.

 

 

1 (16 ounce) package creamed cottage cheese

4 eggs, beaten

1/4 cup vegetable oil

1 (1 ounce) envelope dry onion soup mix

1 cup finely chopped walnuts

1 1/2 cups cornflakes cereal

 

 

 

 

1 Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.

2 In a large bowl, combine cottage cheese, eggs, vegetable oil, soup

mix, walnuts and cereal. Spoon into prepared pan.

3 Bake in preheated oven for 35 to 40 minutes.

 

 

Makes 8 servings

comments that i posted after making it......

 

I ENJOYED THIS RECIPE!! This loaf has nice onion flavor, a meaty

texture and is a nice change from soy based veggie meats. I would

suggest baking it for at least 1 hour (I baked mine for 65 minutes)

and then letting it sit for about a half hour before eating it so

that it has time to completly set. I'm sure that it will be even

tastier tomorrow!

 

The next time that I make it, I will add a little extra cornflakes (2

cups) and maybe a little packaged meatloaf seasoning.

 

****additionall i add garlic powder, paprika and anything else i

might find in the spices rack. i believe that pecans would do well

also....just make sure that whatever nut you are using is grind very

fine!
