Guest guest Posted January 23, 2004 Report Share Posted January 23, 2004 Spinach Feta Rice This recipe features zesty onions, minced and fresh spinach, which is high in iron, high in folate, and a good source of fiber. INGREDIENTS: 1 c Uncooked rice 1 c Vegetable broth 1 c Water 1 Onion, medium 1 c Mushrooms, sliced (4 oz.) 2 cloves Garlic, minced 1 T Lemon juice 1/2 t Dried oregano leaves 6 c Spinach leaves, shredded 4 oz. Feta cheese, crumbled 1/2 t Freshly ground black pepper 1/4 c Chopped pimiento PREPARATION METHOD Bring rice, broth, and water to boil in medium saucepan. Stir, cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender and liquid is absorbed. Cook onion, mushroom, and garlic in large skillet coated with cooking spray until onion is tender. Stir in lemon juice and oregano. Add spinach,cheese, and pepper to rice; toss lightly until spinach is wilted. Garnish with chopped pimiento if desired. Makes 6 servings.
