Guest guest Posted January 30, 2004 Report Share Posted January 30, 2004 Whole Wheat-Raisin Muffins 20 minutes to bake 1 cup each whole wheat flour and all-purpose flour 1/4 cup firmly packed brown sugar 1-tablespoon baking powder 1/2-teaspoon salt 1/2-cup raisins 1 egg 1-cup milk 3 tablespoons butter (melted and cooled) or canola oil 1 teaspoon grated orange zest (optional) Preheat oven to 400 degrees. Lightly grease a standard muffin pan with 12 cups (or two 6-cup muffin pans). In large bowl, sift or thoroughly stir together flour, brown sugar, baking powder and salt. Stir in raisins. In medium bowl, beat egg with milk, melted butter and orange zest (if used). Add egg mixture to flour mixture, stirring until dry ingredients are barely moistened. Fill greased muffin cups about two-thirds full. Bake until well-browned (20 to 25 minutes). Serve warm. Makes 1 dozen muffins. ===== FREE Bible Study For Busy People!
