Guest guest Posted February 18, 2004 Report Share Posted February 18, 2004 Quick Broccoli Cornbread 2 sticks (1 cup) margarine or butter2 packages Jiffy cornbread mix1 10-oz package frozen chopped broccoli, thawed but not drained1 onion chopped1 carton (10-12 oz) cottage cheese4 eggs1 cup shredded cheddar cheeseMelt butter in a 9 X 13 pan.Mix together all other ingredients except cheddar cheese. Pour batter over butter.Bake at 375 for 25 minutes or until lightly brown. Sprinkle with cheddar cheese and bake for another 5 minutes or until cheese is melted and bread is brown.
