This was something I didn't realize until I was at least 20:) It is now a family joke that that only thing she could cook was a lasagna, and everything involved was pre-packaged! This, by the way, is the only way I am able to cook 9/10 times, so here is my delightful quicky cheating lasagna. Again, use the Zen Shluck method of cooking when attempting this recipe. One box of your favorite noodles. My daughter's father doesn't want them boiled first and likes them VERY al dente, but I like to boil the stuff out of them... Alternately, try just any neat shape. The kids seemed to ignore the tofu when there were Zoo or Alien shaped pasta to concentrate on! One jar or one recipe of your favorite sauce. one block of your favorite tofu. I think it's best when crumbled, but you could do a saute thing with what ever shape you like. it's all about aesthetics! onion, mushrooms, garlic, etc. to saute the tofu and give it your flavor du jour Big bag of mozz. cheese big container of cottage cheese. this is personal preference, I prefer the texture and price of cottage cheese over ricotta. Schluck the sauce, tofu together *saute tofu first!*, pour some in the bottom of casserole. Schluck the cheeses together. layer sauce, noodles, cheese over and over again until you run out of room at the top. End with sauce. The cooking will occur in a 350 oven for as long as it takes to make everything bubble. I have found that posting a look-out at the oven is a very satisfactory way to avoid burning. Guest guest Posted February 12, 2004 Report Share Posted February 12, 2004 Vegetarian Lasagna2 lbs Italian squash2 lbs mushrooms4 cups cottage cheese2 cups ricotta cheese1 T basil2 eggs, beaten1 jar Alfredo sauce2 boxes no boil lasagna pastaMix cottage and ricotta cheeses together. Mix in eggs.Shred squash with a potato shredder. Slice mushrooms thinly. Mixslowly into cheese mix.Pour half of the jar of Alfredo sauce in the bottom of a 9x13 bakingdish. Layer half of the noodles on top. Put half of the cheese mixon noodles.
