Black Bean-Chipotle Chili

Amount Measure Ingredient -- Preparation Method

1 tablespoon canola or olive oil

1 large red onion -- diced

1 large red or green bell pepper -- seeded & chopped

2 celery stalks -- chopped

3 cloves garlic -- minced

2 15 oz. cans black beans -- rinsed & drained

1 8 oz. can diced tomatoes

1 14 oz. can crushed tomatoes

1 or 2 canned chipotle chiles -- seeded & minced

1 tablespoon chili powder

1 tablespoon dried oregano

1/2 teaspoon salt

 

In a large saucepan or skillet, heat oil over medium-high heat. Add the

onion, bell pepper, celery, and garlic, and cook, stirring, for about 7 minutes.

Stir in all remaining ingredients and cook for 30 minutes over low heat,

stirring occasionally.

Remove from heat and let stand 5-10 minutes before serving.

Cincinnati-Style Chili

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil spray -- (to 2 tbsp)

1 12 oz pkg Morningstar Farms Burger-Style

Recipe Crumbles

1 medium onion -- chopped

1 tablespoon minced garlic

1 cup tomato sauce

1 cup water

1 14.5 oz can chopped tomatoes

2 tablespoons red wine vinegar

2 tablespoons chili powder -- (to 3 tbsp)

1/2 teaspoon cinnamon

1/2 teaspoon paprika

1/2 teaspoon allspice

1 tablespoon light brown sugar

1 tablespoon unsweetened cocoa powder

1 teaspoon Tabasco sauce

1 cup kidney beans -- rinsed & drained

8 ounces spaghetti -- cooked

shredded Cheddar cheese -- (optional)

 

Heat olive oil in a large skillet. Add onion and cook until tender. Add

" Recipe Crumbles " and garlic and cook until Crumbles are browned.

Add tomato sauce, water, chopped tomatoes, vinegar, chili powder, cinnamon,

paprika, allspice, light brown sugar, cocoa, and Tabasco sauce. Heat over

medium-high heat until beginning to boil. Reduce heat to low, cover, and

simmer 15 to 20 minutes until sauce thickens. Stir in beans and mix lightly.

Spoon cooked spaghetti into bowls and top with chili. Sprinkle with cheese

if desired.

Sangre del Diablo Chili ( " Blood of the Devil " )

2 white onions -- chopped

1/3 bulb (*not* clove) garlic -- chopped

2 2/3 tablespoons oil

1 28 oz jars Enrico's or other prepared spaghetti sauce

2/3 cup water

3 1/3 pounds pinto beans -- cooked & drained

1/2 cup TVP granules

2 2/3 tablespoons chili powder

2 tablespoons cumin

1 teaspoon cayenne pepper

1 tablespoon dried basil

2 teaspoons dried thyme

1 1/3 tablespoons soy sauce

1 1/3 cups sun-dried tomatoes

 

In a large kettle, saute onions and garlic in oil until onions are

translucent. Add all remaining ingredients and stir over low heat until TVP is

soft and flavors have blended, about 30 mins. to 1 hour.

NOTES : This recipe serves a large crowd, but can be reduced accordingly for

fewer servings.

Smoky Black Bean Chili

Amount Measure Ingredient -- Preparation Method

2 15 oz. cans black beans -- rinsed & drained

2 15 oz. cans diced tomatoes

1 cup salsa

1 tablespoon chili powder

1 teaspoon dried oregano

salt to taste

1 teaspoon liquid smoke flavoring

2 tablespoons fresh cilantro -- minced

 

Combine beans, tomatoes, salsa, chilli powder, oregano, and salt in a

medium saucepan. Bring to a boil, reduce heat, and simmer, uncovered, about

10-15 minutes. Stir occasionally and add more salsa or water if becomes to dry

or thick. Just before serving, add liquid smoke and cilantro.

Spud Chili

1 lg onion -- chopped

2 tbsp oil

4 cloves garlic -- minced

1 jalapeno -- seeded & minced

1 tbsp chili powder

1 tsp ground cumin

1 tsp ground allspice

1 tsp dried basil

1/2 tsp dried oregano

2 14 1/2 oz. cans stewed tomatoes

3 cups vegetable broth

3 potatoes -- scrubbed & diced

1 med bell pepper -- finely chopped

2 15 oz. cans pinto beans -- rinsed & drained

salt & pepper to taste

 

In a Dutch oven, saute onion in oil over high heat until browned. Add

garlic, jalapeno, chili powder, cumin, allspice, basil, and oregano. Saute,

stirring often, about 2 mins. Add tomatoes with juice and veg. broth, stirring

to loosen bits of browned food on bottom of pan. Bring to a boil. Add potatoes

& bell pepper, bring to a boil. Cook, uncovered, over med. heat for 15 mins,

stirring occasionally. Add beans and cook another 10-15 mins. Season with salt

& pepper to taste.

Uncle Roy's Chili

Amount Measure Ingredient -- Preparation Method

3 tablespoons olive oil

1 28 oz. can stewed tomatoes -- broken up (w/liquid)

1 15-16 oz can Mexican-style tomatoes -- broken up (w/liquid)

3 tablespoons chili powder

1 tablespoon Tabasco sauce

2 medium onions -- chopped

2 15-16 oz can kidney beans -- rinsed & drained

2 cloves garlic -- minced

OPTIONAL: 1/2 cup TVP granules

OPTIONAL: habanero powder to taste*

 

Heat olive oil in a large skillet or Dutch oven. Add onions and garlic and

cook until soft. Add stewed tomatoes and spices and simmer about 30 minutes.

Add beans and simmer another 20-30 minutes.

The cooking time is very flexible. The main reason for the longer cooking

time is to allow the spices to blend with the other ingredients.

NOTES : Habanero powder is a specialty item available from Stonewall Chili

Company and possibly some other similar companies.
