I really like miso and I had a big bag of spinach so ... this recipe caught my eye. Melody * Exported from MasterCook Mac * Miso Rice Pilaf with Spinach - Mel's version Recipe By : Serving Size : 8 Preparation Time :0:00 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tsps olive oil 1/4 c onion -- chopped 1 gal spinach leaves -- washed and dried 2 c lundburg " s short grain brown rice 3 tsps miso 4 c water 1 pkg tofu -- in 1 " cubes In a medium saucepan, heat the oil. Add the onion and rice; saute about 10 minutes. Add water; bring to a boil. Reduce the heat and simmer, covered, until the rice is tender and the water is absorbed, 35-40 minutes. Dissolve the miso in 2 tablespoons water, stirring as needed. Gently stir into the rice. Turn off heat.
