Guest guest Posted March 12, 1999 Report Share Posted March 12, 1999 This is my son's favorite filling for tortillas. * Exported from MasterCook * Spicy Vegie Filling Recipe By : Sandra Rech Serving Size : 8 Preparation Time :0:00 Categories : Vegetable Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Canola oil 1 large onion -- chopped 2 large carrots -- sliced 1/8 " thick 1 clove garlic -- chopped 2 1/2 teaspoons chili powder 1 teaspoon salt 3/4 teaspoon ground cumin 3/4 teaspoon oregano 4 medium zucchini -- cut in 1/2 " cubes 1 large green bell pepper -- chopped 8 ounces whole kernel corn, frozen 16 ounces red beans -- drained In a large frying pan, heat oil over med-high heat. Add onion, carrots, garlic, chili powder, salt, cumin and oregano and cook until onion is limp, about 10 mins. Stir in zucchini, bell pepper, corn and beans; cook stirring often until zucchini is tender crisp, about 7-8 minutes.
