Zesty Cheddar Sauce

 

Recipe By : Weight Watchers, March 1999

Amount Measure Ingredient -- Preparation Method

2 tablespoons all-purpose flour

1/2 teaspoon dry mustard

1/4 teaspoon salt

1/4 teaspoon paprika

dash of ground red pepper

3/4 cup 1% low-fat milk

3/4 cup shredded sharp cheddar cheese -- (3 ounces)

 

Combine first 5 ingredients in a saucepan; stir well. Gradually add milk,

stirring with a whisk until blended. Place over medium heat; cook 4 minutes

or until thick, stirring constantly. Remove from heat; add cheese, stirring

until cheese melts. Yield: 4 servings (servings size: 1/4 cup).

NOTES : Serve Zesty Cheddar Sauce over hot cooked pasta or macaroni.

Fill a baked potato with chopped cooked broccoli, and top with sauce.

Spoon sauce over steamed broccoli or cauliflower. Sprinkle with paprika.
