I love pasta and love to make it. Can't go wrong...fool proof usually and what's neat is, a salad and bread on the side and wahhhlah - done! This pennoni is our tube shaped pasta with the ends cut on the diagonal, but I bet any shape will work about as well. ) Brenda Adams * Exported from MasterCook Buster * Pennoni Pasta W/Avocado, Chili & Cilantro Recipe By : " Vegetarian Pasta " by Rose Elliot, Random House, 1997 Serving Size : 4 Preparation Time : Categories : Pasta Cookbook Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 ounces pennoni pasta -- (little tube shapes) salt 1 clove garlic -- peeled and crusthed 1 gresh green chili -- de-seeded and -- finely slicd 1 tablespoon olive oil 1 avocado -- peeled and sliced 1 lemon -- juice of greshly gound black pepper 4 tablespoons cilantro -- roughly chopped Note: It is important not to let the avocado get to hot as it will spoil it's flavor. 1. Fill a large saucepan with 4 quarts of water and bring toa boil over high heat for the pasta. 2. When the water boils, add the pasta along with a tablespoon of salt and give the pasta a quick stir. Briefly put the lid on until it starts to lift, showing that the water has come back to a boil, then let the pasta bubble away, uncovered, for about 8 minutes, or until it is tender but still has some bite to it. 3. Meanwhile, saute the garlic and chili in the olive oil over low heat for 2 to 3 minutes, until softened but not browned. Keep on one side. 4. Toss the avocado in the lemon juice and season with salt and pepper. 5. Drain the pasta by tipping it all into a colander placed in the sink, then put it back into the still-warm pan and add the chili mixture and avocado.
