Creamy Herb Dressing

Amount Measure Ingredient -- Preparation Method

1/2 cup lite soft tofu

2 tablespoons soy milk or skim milk

2 tablespoons olive oil

2 tablespoons to 3 tbsp lemon juice

1 teaspoon honey (optional)

1/4 teaspoon salt

1/4 teaspoon garlic powder

2 teaspoons fresh dill or 1 tsp. dried dill

 

Combine all ingredients except the dill in a blender and blend until

smooth. Scrape the sides of the blender as needed. Add more milk as needed to

get a consistency that is quite thin and pourable.

Pour into a bowl and sir in dill. Add more lemon juice if a tangier taste

is preferred.

Light Tofu Creme Cheeze

1/4 pound firm regular tofu, patted dry -- crumbled

1/3 cup firm silken tofu, patted dry -- crumbled

1 1/2 tablespoons fresh lemon juice

1 1/2 teaspoons tamari soy sauce

1/2 teaspoon nutritional yeast flakes

 

Place all ingredients in a food processor and process until completely

smooth.

Store in the refrigerator.

Ranch Soy Mayonnaise

Amount Measure Ingredient -- Preparation Method

1 cup water

2/3 cup Soyagen (soy milk powder)*

1 pinch salt

1 tablespoon honey or sugar (optional)

3 tablespoons to 4 tbsp. Hidden Valley Ranch dry

dressing mix

1/4 cup light olive oil or canola oil

juice of 1 fresh lemon

 

In blender, place water, Soyagen, salt, honey or sugar (if using), and

ranch dressing mix. Process until smooth.

While continuing to blend, slowly pour oil into mixture. Mixture will

thicken. Pour into container that has a sealable lid.

Stir lemon juice in mayonnaise. The mayonnaise with thicken. Chill in

sealed container until serving time.

NOTES : If you do not have Soyagen, do not use any other type of soy or tofu

milk powder because the mayonnaise will not thicken. It is best to replace the

Soyagen and water with 10 ounces of soft tofu blended with enough water to think

to a white sauce consistency.

Rich Tofu Creme Cheeze

Amount Measure Ingredient -- Preparation Method

1/4 cup raw cashew pieces

3 tablespoons water

2 tablespoons fresh lemon juice

1 tablespoon brown rice syrup or 2 tsp. maple syrup

1 cup firm regular tofu, patted dry -- crumbled

3/4 teaspoon salt

pinch garlic granules

 

Place the cashew pieces, water, lemon juice, and rice syrup or maple syrup

in a blender. Process several minutes into a thick, smooth cream. Add the

salt, crumbled tofu, and garlic granules and process until very smooth.

It is essential to blend the mixture for several minutes in order to

pulverize the tofu and achieve a velvety smooth consistency.

Chill thoroughly before serving.

Soy Ranch Dressing

1 cup water

2/3 cup Soyagen*

1 pinch salt

1 tablespoon sugar or honey

4 tablespoons Hidden Valley Ranch dressing mix

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup canola oil

juice of one lemon

 

In a blender, place water, Soyagen, salt, honey or sugar, ranch dressing

mix, garlic powder, and onion powder and process until smooth. While blending,

slowly pour oil into mixture. Mixture will thicken. Pour mixture into a

container.

Stir in lemon juice. Dressing should thicken more with the addition of

lemon juice.

Chill in sealed container until serving.

NOTES : If you do not have Soyagen, a soy milk powder, do not use any other soy

or tofu milk powder because it will not thicken. It is best to replace the

water and Soyagen with 2/3 cup tofu blended with enough water to thin to white

Tofu Dressing

1/4 cup minced onion

2 cloves garlic -- minced

1 tablespoon minced fresh basil -- (or 3/4 tsp. dried)

1 1/3 cups light olive oil

1/2 cup cider vinegar

1/2 cup tamari soy sauce

1 pound tofu -- water pressed out

 

Blend everything but tofu in a blender or food processor. Then add tofu a

little at a time and blend until smooth. Non-silken tofu must blend a long time

to get smooth enough to remove the " grainy " feel.

NOTES : I'd use soft tofu, or even silken might be better, even though that's

not what the recipe calls for.

minute or until smooth. Refrigerate until serving time.

4 tablespoons vegetable oil

1 tablespoon lemon juice

1 1/2 teaspoons honey

Blend all ingredients until smooth and creamy. Use as a replacement for

dairy sour cream.

NOTES : *This is a " non-dairy " version of sour cream, but is not entirely vegan

since it calls for honey. Another sweetener could probably be used maybe the

honey just omitted.

Combine all ingredients in a blender and process until smooth. Transfer to

a container, cover, and refrigerate several hours to firm up.

Process all ingredients for several minutes in a blender or food processor

until completely smooth. Chill thoroughly before serving and store in the

refrigerator.

Tofu Yogurt or Sour Cream

1 10 oz pkg lite soft silken tofu

2 tablespoons canola oil

1 tablespoon lemon juice

1 1/2 teaspoons honey*

1/2 teaspoon salt

 

Combine all ingredients in blender or food processor and blend until

smooth. Chill until serving.

Keeps about 5 days in refrigerator.

NOTES : *To make completely vegan, omit honey or use alternative sweetener.
