Hi everyone,

 

This is my first posting to this list. These are 5 recipes from the UK

web site of the UK Vegetarian Society. I have over 350 from this site

and will post them all over the next few weeks.

All-In-One Shortbread

 

Recipe By :

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 ounces wholemeal flour

4 ounces margarine or butter

2 ounces demerara sugar

 

1. Put the ingredients in a food processor and process until the

mixture resembles breadcrumbs.

 

2. Press the mixture lightly in to a greased 7 " x10 " Swiss roll tin.

 

3. Bake at 180øC/350øF/gas mark 4 for 15-20 minutes or until pale

brown. Mark into sections and leave to cool.

NOTES : This is one of the fastest biscuit recipes ever! The all in one

method yields a crispier texture than a traditional shortbread but is

equally delicious

Almond And Herb Dip

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/4 pint tub soured cream

2 tablespoons mayonnaise

4 tablespoons ground almonds

2 tablespoons snipped chives

2 ounces peeled and grated cucumber

1 tablespoon fresh chopped dill

salt and freshly ground black pepper

 

1. Mix all ingredients well in mixing bowl.

 

2. Chill for 1 hour.

 

3. Turn out into a serving dish and garnish with chive flowers, toasted

flaked almonds and dill fronds.

 

4. Serve with a selection of crudite - try to vary the vegetables from

those used in the vegetable kebabs.

 

Tips: Make sure the mayonnaise contains free-range eggs, or buy the

vegan variety

Almond And Tomato Bites

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 medium onion -- finely chopped

1 small clov garlic -- finely chopped

2 tablespoons vegetable oil

8 ounces tomatoes -- skinned and chopped

4 ounces almonds -- ground or coarsely

-- crushed

6 ounces wholemeal breadcrumbs

salt and freshly milled black pepper to

-- taste

freshly chopped parsley to garnish

 

1. Saute the onion and the garlic in the oil in a pan until softened.

 

2. Add the tomatoes and cook for another 5 minutes.

 

3. Pour the mixture into a bowl and add the almonds and breadcrumbs.

 

4. Mix well. Season to taste with salt and black pepper.

 

5. Form the mixture into small, bite-size balls. Arrange on serving

plate and cover them with masses of chopped parsley.

Alu-Chole With Rice

 

Recipe By :

Serving Size : 1 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 tablespoons vegetable oil

4 small cinnamon sticks

4 bay leaves

1 teaspoon cumin seeds

1 large onion -- finely chopped

1 teaspoon garlic -- crushed

1 15 ounces ca chopped tomatoes

3 tablespoons Sharwood's Hot Curry Paste

2 15 oz cans chick peas -- drained

4 ounces potato -- diced

1/4 pint water

2 tablespoons lemon luice

4 tablespoons coriander leaves -- chopped

salt to taste

 

1. Heat the oil and fry the cinnamon, bay leaves and cumin seeds for 1

minute.

 

2. Add onion and garlic, fry until golden brown.

 

3. Add chopped tomatoes, curry paste and salt. Fry for a further 2-3

minutes

 

4. Stir in chick peas, potatoes and water. Bring to the boil,cover and

simmer for 15 minutes or until potatoes are cooked. Stir in the

coriander and lemon juice. Garnish and serve with rice. Follow with a

fruit crumble.

American-Style Granola

Serving Size : 1 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 ounce sunflower oil

1/2 ounce runny honey

6 ounces rolled oats

1 ounce each wholewheat flakes -- sesame seeds,

-- sunflower seeds,

-- and mixed chopped

-- nuts

1 tsp ground cinnamon

 

1. Preheat the oven to 160øC/325øF/Gas mark 3.

 

2. Combine the oil and honey and mix with the other ingredients.

 

3. Spread this out evenly on a non-stick baking tray and bake for about

30 minutes, turning once. Check regularly to ensure it isn't

over-browning.

 

4. Remove from the oven when deep golden brown.

Love the recipes in British format Alan, not a cup in sight :-) I'm an

ex-pat living in Memphis, TN, been here since '74, originally from Grimsby,

Lincs....where are you from?
