The " Greek Spaghetti " is one of our " staple foods " -- very easy to make and

soooo good! I haven't tried the Lemon Dll Rotini yet, but it does sound good.

Greek Spaghetti

Amount Measure Ingredient -- Preparation Method

2 cloves garlic -- minced

3 tablespoons olive oil

2 14.5oz.cans diced tomatoes w/basil, garlic & oregano

1/2 cup green onions -- sliced

1/4 cup fresh parsley -- chopped

1 tablespoon lemon juice

12 ounces spaghetti -- cooked

1 cup crumbled feta cheese

1 2 1/4 oz can sliced ripe olives

garnishes: lemon slices, green onions,

fresh parsley sprigs

 

Saute garlic in hot oil in a large nonstick skillet until tender. Add

tomatoes and next 3 ingredients; saute 2 minutes or until thoroughly heated.

Toss together tomato mixture, pasta, cheese, and olives. Garnish if

desired.

Lemon Dill Rotini

Amount Measure Ingredient -- Preparation Method

12 ounces rotini pasta

2 teaspoons olive oil

1/2 lemon -- Juice of

1/4 cup black olives

1 tablespoon capers -- drained

1/2 cup fresh dill -- chopped

4 scallions -- sliced

4 ounces mushrooms -- thinly sliced

1/2 red bell pepper -- diced

1/4 cup crumbled feta cheese

Black pepper

 

1. In a large pot of boiling water, cook rotini according to package

instructions; drain well. 2. In a large bowl, whisk together oil and lemon

juice. Add cooked pasta and toss to coat. Add remaining ingredients and toss

gently to combine. Season to taste with black pepper. Serve immediately or

chilled.
