Hope this is good.... " WELL! ! I just received a report from a friend to actually COOKS! ) And she made this and sent a report that it's good! So, here's the recipe again with her report included. I like to post recipes more than I like to cook, BUT if I cook, I like to know it's a sure thing and I love to tell others that something is really good. xxx000 Brenda * Exported from MasterCook * Crustless Spinach Quiche (Oregon) Includes Report Recipe By : Tillamook Cheese Factory Serving Size : 6 Preparation Time :0:00 Categories : Restaurants Quiche Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces spinach -- frozen, chopped -- (thawed and -- well-drained) 1 cup cottage cheese 1/2 cup sour cream 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon seasoning salt 1 cup cheddar cheese** -- grated 1 cup mushrooms -- chopped 1/4 teaspoon thyme 6 eggs beaten 1/4 cup parmesan cheese ** A medium cheddar Tillamook cheese is preferred, of course! Preheat oven to 325 degrees. Combine all ingredients, except Parmesan cheese, in order given. Bake uncovered 45 minutes. Sprinkle with Parmesan cheese. Let stand 10 minutes. Cut into squares. The quiche was GREAT and even my picky kids and hubby liked it -- finished the whole thing! The ONLY thing I'd change in the recipe is buttering the baking dish. At the last minute I decided to spray it with olive oil, and boy was I glad I did. It still stuck to the dish a little bit, but would probably be a big problem if you didn't grease the pan at all.
