Hi all,

 

Remember that I wrote

 

" Here's one I can't vouch for...found it in a book. Love crustless

recipes... better on the hips. :) Hope this is good.... "

 

WELL! ! I just received a report from a friend to actually COOKS! :))

And she made this and sent a report that it's good! So, here's the recipe

again with her report included. She says it's a keeper. <grin> I am gonna

make it real soon. Thanks so much, Susan. I love hearing back about

recipes folks (and I) have posted. I like to post recipes more than I like

to cook, BUT if I cook, I like to know it's a sure thing and I love to tell

others that something is really good. xxx000

Crustless Spinach Quiche (Oregon) Includes Report

 

Recipe By : Tillamook Cheese Factory

Serving Size : 6 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

10 ounces spinach -- frozen, chopped

-- (thawed and

-- well-drained)

1 cup cottage cheese

1/2 cup sour cream

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon seasoning salt

1 cup cheddar cheese** -- grated

1 cup mushrooms -- chopped

1/4 teaspoon thyme

6 eggs beaten

1/4 cup parmesan cheese

 

** A medium cheddar Tillamook cheese is preferred, of course! :)

 

Preheat oven to 325 degrees.

 

Combine all ingredients, except Parmesan cheese, in order given. Bake

uncovered 45 minutes. Sprinkle with Parmesan cheese. Let stand 10 minutes.

Cut into squares.

 

Variations: Use Tillamook Monterey Jack cheese instead of Cheddar.

" I ultimately used a 9 " round baking dish and that was a perfect size.

The quiche was GREAT and even my picky kids and hubby liked it --

finished the whole thing! The ONLY thing I'd change in the recipe is

buttering the baking dish.

At the last minute I decided to spray it with olive oil, and boy was I

glad I did. It still stuck to the dish a little bit, but would probably

be a big problem if you didn't grease the pan at all. Brenda, thanks for

the recipe -- it's a keeper!!!!! "
