Ellen C. * Exported from MasterCook Mac * Tofu Corn Puffs Recipe By : The Vegetarian Way, Mark & Virginia Messina Serving Size : 1 Preparation Time :0:00 Categories : Vegan Vegetarian tofu Burgers & Loaves Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup cashews 1/2 cup water 1/2 pound tofu 2 tablespoons nutritional yeast 1 small onion -- finely chopped 2 cups corn kernels -- fresh or frozen 1/4 teaspoon dried basil 2 cups fresh whole wheat bread crumbs vegetable oil for frying Makes 8 patties. Place the cashews and water in a blender and process until the cashews are completely pureed. Add the tofu and nutritional yeast and blend until all the ingredients are well mixed. Place the mixture in a bowl and stir in the onion, corn, basil, and bread crumbs. For the mixture into patties and brown them in a small amount of vegetable oil. Assoc. : 0 0 0 0 0 0 0 26176 0 _____ * Exported from MasterCook Mac * Tofu French Fries w/ Spicy Peanut Sauce Recipe By : The Vegetarian Way, Mark & Virginia Messina Serving Size : 8 Preparation Time :0:00 Categories : Vegan Vegetarian tofu Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds firm tofu 3 tablespoons vegetable oil 5 tablespoons smooth peanut butter 3 tablespoons brown sugar 4 tablespoons tamari soy sauce 1 teaspoon cayenne 1 teaspoon minced garlic 1 tablespoon water -- to 2 tbsp Cut the tofu into pieces the size and shape of french fries. Brush the pieces lightly with the oil. Spread in 1 layer on a cookie sheet and place under the broiler. Broil both sides for about 10 minutes until crispy and golden brown. Mix together the peanut butter, brown sugar, tamari, cayenne, and garlic. Add enough of the water to give the sauce a creamy consistency. Use as a sauce or dip. Serves 8 as an entree.
