Guest guest Posted March 17, 1999 Report Share Posted March 17, 1999 * Exported from MasterCook II * Broccoflower Soup Recipe By : Catherine Leslie Serving Size : 1 Preparation Time :0:00 Categories : Broccoflower Soup Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Tbs Vegetable Oil 1 Large Onion -- chopped 2 Carrots -- sliced 1 Head Broccoflower -- broken into florets 1 Stalk Celery 3 Medium Potatoes -- diced 5 Cups Water 3 Cups Sliced Mushrooms 1 Tsp Dried Parsley Or 1 Tbs Fresh, Minced Black Pepper -- to taste 1 Cup Soy Milk Saute onions in oil until tender. Add carrots, broccoflower florets and celery and saute for 5 minutes. Place vegetables into a large soup pot. Add potatoes, water and mushrooms. Bring to a boil. Cover and simmer for 20 minutes or until potatoes are tender. With a slotted spoon, remove 2 cups of vegetable mixture. Puree in food processor and place back into the soup pot. Add the parsley, black pepper and soy milk. Heat through for approximately 5 minutes. - - - - - - - - - - - - - - - - - - NOTES : A Cath Original.
