Guest guest Posted March 17, 1999 Report Share Posted March 17, 1999 * Exported from MasterCook II * Gazpacho Recipe By : Polly Pitchford and Delia Quigley Serving Size : 4 Preparation Time :0:00 Categories : Gazpacho Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Ripe Tomatoes -- quartered 1 Small Onion -- coarsely chopped 1 Medium Cucumber, Peeled -- coarsley chopped 1 Clove Garlic -- peeled 1 Cup Tomato Juice 2 Tbs Lemon Juice Salt And Pepper -- to taste Cayenne -- to taste 1 Sprig Parsley -- destemmed 4 Ice Cubes Toss everything into a blender or food processor and blend until vegetables are small but not pureed. Season to taste. The ice cubes add a little water as they melt and help to chill the soup.
