Guest guest Posted March 17, 1999 Report Share Posted March 17, 1999 * Exported from MasterCook II * Carrot Soup With Dill And Wild Rice Recipe By : Muriel Golde Serving Size : 5 Preparation Time :0:00 Categories : Carrot Soup Vegan Wild Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Cups Water Or Veg Broth 1 1/2 Cups Carrots 1 Medium Onion -- diced 1 Medium Potato -- diced 1/4 To 1/3 Cup Chopped Fresh Dill 1/2 Cup Diced Celery 2 Large Cloves Garlic -- minced 3/4 Tsp Sea Salt 2 Tsp Olive Oil Or Other Oil 2 Tbs Veg Broth Powder 3/4 Cup Cooked Wild Rice Extra Dill -- for garnish Cook carrots, onion, potato, dill, celery, garlic and salt in the water or broth until vegetables are tender, about 15 minutes. Add olive oil and broth powder. Process about half in blender; return blended portion to pot, add wild rice. Place on heat source until heated through. Serve, garnishing each bowl with a little finely cut dill or parsley. Makes about 5 1/2 cups.
