Guest guest Posted March 17, 1999 Report Share Posted March 17, 1999 * Exported from MasterCook II * Corn Chowder Recipe By : Virginia and Mark Messina " The Vegetarian Way " Serving Size : 6 Preparation Time :0:00 Categories : Chowder Corn Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Large Onion -- coarsely chopped 1 Clove Garlic -- minced 1 Green Bell Pepper -- coarsely chopped 1/2 Cup Chopped Celery 1 Tbs Olive Oil 6 Medium Potatoes -- diced 2 Cups Vegetable Stock 2 1/2 Cups Frozen Or Fresh Corn Kernels 2 Cups Soymilk 1/2 Tsp Dried Sage 1/2 Tsp Dried Rosemary 1/2 Tsp Dried Basil Salt And Pepper To Taste Saute the onion, garlic, green pepper and celery in olive oil for 2 minutes. Add the potatoes and vegetable stock and simmer over low heat until the potatoes are tender. Add the corn kernels, soymilk and herbs and simmer for an additional 5 minutes.
