Oh, sorry folks for the ucky (gross even) meat reference in the notes that came

with the Traditional Salad recipe (which itself is vegetarian) from Ireland.

Wheaten Bread (French Village Bakery, Belfast)

2 cups coarse whole wheat flour

2 cups all purpose flour

1/4 cup brown sugar

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons baking powder

1/4 cup margarine

2 eggs

3/4 cup buttermilk

2 tablespoons oil

1 tablespoon molasses

 

Mix dry ingredients together in a large bowl. Cut in margarine with a pastry

blender. Beat eggs, add liquids and mix with dry ingredients. Turn onto

floured board and knead gently to form a loaf. Place in a 9x5 loaf pan. Bake

at 375 degrees for 55-60 minutes. The dough can also be baked in a round shape

on a baking sheet. After kneading, shape into a round and cut with a knife

about 1/2 inch deep, in a cross shape. It will take less time to bake, about

45-50 minutes.

 

The French Village Bakery, on Stranmillis Road, Belfast, Ireland, is well known

in the city of Belfast for their delicious baked products. Henry has owned

this business for 14 years.

Belfast is famous for: wheaten bannock, wheaten loaf and Belfast Bap. The bap

is a simple white bread, formed into round loaves and placed close together on

the baking sheet to bake. The top is dusted with rice flour and is frequently

burned for the flavor it creates. That is what truly makes it unique. The

wheaten loaves are found all over Ireland. They are hardy, crusty, healthy and

full of whole grain taste. The bakers use what they call " treacle fat " , it is

a mixture of margarine, oil and molasses.
