One of my favorite recipes, Unsloppy Joes, is not on my computer here at work.

I'll post it too from home later.

Sloppy Joe

Amount Measure Ingredient -- Preparation Method

1 sm Onion, chopped

4 Garlic cloves, minced

1 tb Vegetable oil

3 lg Mushrooms, chopped

1 lg Carrot, grated

1/2 tb Parsley

1/2 lb Tofu, crumbled

2 ts Tamari

3 tb Tomato sauce

 

Saute onion & garlic in oil till transluscent. Add pepper, mushrooms,

carrot & parsley. Stir fry briefly & add tofu, tamari & tomato sauce.

Cook till well heated through. Stuff into pita bread & serve.

Sloppy Joes II

Amount Measure Ingredient -- Preparation Method

1 tb Olive oil

2 ea Garlic cloves, minced

1 ea Chopped onion

1 ea Green bell pepper, chopped

2 c TVP granules or flakes mixed

-- with 1 3/4 c hot water

6 oz Can tomato paste

1/2 c Water

1 t Oregano

1/4 c Tomato ketchup

1/4 ts Cayenne pepper

1 t Worcestershire sauce

1 tb Honey, optional

Salt, optional

8 lg Kaiser rolls, split

Shredded lettuce

 

Heat oil in a large skillet & saute garlic, onion, pepper & TVP. In a

bowl, mix tomato paste with water, oregano, ketchup, cayenne,

worcestershire sauce & honey is using. Stir into skillet. Bring to a

boil & add salt if desired. The sauce should be thick but spreadable.

 

If desired, toast rolls. Spoon the sauce over the bottom half of the

roll, pile on the lettuce & top with remaining roll half.

Sloppy Vegetable Sandwiches

Amount Measure Ingredient -- Preparation Method

1 cup chopped carrot

1 cup chopped celery

2/3 cup dry lentils -- rinsed & drained

2/3 cup uncooked brown rice

1/2 cup chopped onion

2 cloves garlic -- minced

2 tablespoons brown sugar

2 tablespoons prepared mustard

3 1/2 cups vegetable broth

1 8 oz can tomato sauce

2 tablespoons vinegar

8 hamburger buns or French rolls

 

In a 3 1/2, 4, or 5-quart crockpot, combine carrot, celery, dry lentils,

uncooked brown rice, onion, garlic, brown sugar, and mustard. Stir in vegetable

broth.

Cover and cook on low heat for 8 to 10 hours or on high heat for 4 to 5

hours.

Stir in tomato sauce and vinegar, cover and cook for 30 more minutes.

To serve, spoon mixture onto buns or rolls.

TVP Sloppy Joes

Amount Measure Ingredient -- Preparation Method

1 cup TVP

3/4 cup Boiling water

1 Green bell pepper -- diced

1 Onion -- minced

1 Stalk celery -- minced

1 Carrot -- minced

1/3 cup Water

2 8 oz cans tomato sauce

1 1/2 tablespoons Red wine vinegar

1 tablespoon Molasses

2 tablespoons Chili powder

1 1/2 teaspoons Garlic powder

1/4 teaspoon Tabasco sauce

Hamburger buns

 

Combine TVP and boiling water and set aside. " Saute " bell pepper, onion, celery

and carrot in 1/3 cup of water in a deep skillet or dutch oven until soft, about

5 to 7 minutes. Add TVP and remaining ingredients and cook over medium heat for

5 to 10 minutes until heated through. Serve on toasted hamburger buns.

Vegetable Joes

4 ounces tempeh -- crumbled

1 small onion -- diced

1 green pepper -- diced

1 tablespoon oil

1/4 cup bulgur

8 ounces tomato sauce

1/2 cup boiling water

1 tablespoon chili powder

1/8 teaspoon pepper

1/2 teaspoon salt

1/2 teaspoon cumin

1 teaspoon mustard

1 teaspoon garlic powder

hamburger buns

 

Saute tempeh, onion, green pepper, in oil 10-15 minutes. Pour boiling

water over bulgur; let sit while other ingredients saute. After 10-15 minutes,

add soaked bulgar, tomato sauce, and spices to tempeh mixture. Simmer 30

minutes. Serve on hamburger buns.

Veggie Sloppy Joes

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil

1 medium onion -- chopped

1 green pepper -- chopped

3 cups cooked brown rice

2 16 oz cans Mexican-style pinto beans

3/4 cup hickory smoke barbecue sauce

6 hamburger buns -- (or 4)

 

Heat oil in large skillet over medium-high heat. Add onion and green

pepper; cook 2 to 3 minutes. Add rice, beans and barbecue sauce. Simmer 10 to

15 minutes, until heated through.

Serve on buns.

 

Makes 4-6 servings.

Veggie Sloppy Joes

Amount Measure Ingredient -- Preparation Method

1 Veggie burger patty -- cooked

(I used better 'n burgers)

1 each Spices to taste : oregano

Parsley, basil, garlic

Black pepper -- cayenne

Pepper

Chili powder

1 teaspoon Sugar

1 small Can tomato sauce

1 small Can tomato paste

 

Crumble cooked veggie burger into saucepan. Mix in remaining ingredients and

bring to a boil. Simmer on low heat for 10-15 minutes.

 

Serve on a whole-wheat h*mburger bun (if you're lucky enough to find one).

Oven-baked french fries and corn go well with the sloppies.

 

Source: On the way home from work last night I suddenly got a craving for a

sloppy joe so I came up with the following recipe.
