Baked Breaded Tofu Cutlets

Amount Measure Ingredient -- Preparation Method

1 pound firm or extra-firm tofu

1/3 cup wheat germ

1 teaspoon salt-free seasoning mix

1/2 teaspoon salt

3/4 cup plain low-fat yogurt

2 tablespoons soy mayonnaise

OR reduced-fat mayonnaise

1 1/2 tablespoons pickle relish

2 teaspoons Dijon mustard

 

4 SERVINGS LACTO

 

Preheat oven to 450 F. Cut tofu into 1/2-inch-thick slices. Blot well

with clean towel or several layers of paper towels, then cut into

1/2-inch-wide strips.

 

Combine wheat germ, seasoning mix and salt on a plate and lightly bread

tofu sticks. Arrange breaded tofu on lightly oiled nonstick baking sheet.

Bake until the cutlets are golden and firm, 15 to 20 minutes.

 

Meanwhile, combine remaining ingredients in small bowl and stir well.

Serve cutlets with sauce for a topping.

egg beaters® 99% egg substitute

seasoned bread crumbs

 

Slice like cheese, dip in egg substitute and then seasoned (no salt) bread

crumbs. Cook on Pam'ed baking sheet at 350 for 5 min., flip and continue

cooking to your crispyness liking; can't believe you're eating tofu!

non-stick cooking spray

 

One thing I recently discovered for tofu is broiling! Cut tofu into strips.

Spray a pan with non-stick spray. Place tofu on it and drop a couple drops of

tamari (soy sauce) on. Broil for about 5 minutes. Pull out, flip over and broil

for 5 more minutes. I can't guarantee your husband will eat this, but it does

have a different texture than any tofu I have ever tried. I think it looks like

chicken strips. I've never had chicken before, so I don't know if it tastes

like chicken.

Marinated Tofu

1/2 cup liquid honey

1/4 cup soy sauce

4 cloves garlic -- chopped (4 to 5)

---

1 package firm tofu

 

Mix the first ingredients together to make a marinate.

 

Cut tofu into cubes and marinate in sauce overnight if time allows.

 

Grill on bbq or in oven.

 

You can also prepare these tofu squares in a non stick fry pan.

Tofu Crisps

Amount Measure Ingredient -- Preparation Method

2 tbsp. apple cider vinegar

2 tbsp. soy sauce

16 oz. firm tofu -- rinsed and drained

- cut into bite sized cubes

1/3 c. nutritional yeast

1/3 c. whole wheat flour

1 tsp basil

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp. cracked black pepper

 

In a bowl combine vinegar and soy sauce. Add tofu cubes and stir to coat.

Marinate for at least 10 min. Preheat oven to 450 degrees. Place remaining dry

ingredients in a one gallon ziplock. Seal and shake. Drain tofu and put cubes,

in two batches, into ziplock. Seal and shake to coat. Place coated cubes on a

cookie sheet and bake 20 min or til browned.

 

Makes one pound crisps.

NOTES : These seasoned tofu cubes are baked at a high temp. so they are crispy

on the outside and tender on the inside. They're great as croutons on salads,

or in pastas, stews and soups.
