Guest guest
Here's a sworn true recipe from Mo's, a very famous place (actually, they have a couple locations) here on the Oregon coast. Brenda * Exported from MasterCook * Mo's Peanut Butter Pie (Newport, Oregon) Recipe By : Mo Niemi of Mo's in Newport, Oregon Serving Size : 8 Preparation Time :0:00 Categories : Desserts Oregonian Restaurant Requests Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 Cups milk 3/4 Cup granulated sugar 1/4 Teaspoon salt 1/4 Cup cornstarch 1 Teaspoon vanilla 2 Tablespoons margarine or butter 1/2 Cup creamy peanut butter prebaked 9-inch pastry shell whipped cream finely chopped peanuts Scald milk by heating just to below boiling point, until bubbles form around edge. Sift together the sugar, salt and cornstarch into a 2-quart bowl. Then add half the scalded milk and mix well. Blend with a wire whip. Pour that mixture back into the remaining half of the scalded milk in a pan, stirring while continuing to cook. Add margarine and vanilla, continuing cooking over low heat until the cornstarch no longer tastes, as the filling mixture is thickened. Remove from heat and fold in the peanut butter. Mix well. Pour into a prebaked 9-inch pastry shell. Garnish with whipped cream and finely chopped peanuts. Refrigerate. This is absolutely fantastic, even without the whipped cream topping! I got this recipe on a list some years back...don't know which - posted by John Snell, jws. Supposedly, it's authentic...the exact one served at Mo's. Posted to RecipeCafe by Brenda Adams. John said that this was in the Oregonian in 1982. - - - - - - - - - - - - - - - - - - - - -
