Guest guest Posted March 19, 1999 Report Share Posted March 19, 1999 * Exported from MasterCook * Baby Yellow Squash Made Fantastic by Jerry Adams Recipe By : Jerry Adams (great vege grower & husband of Brenda) Serving Size : 2 Preparation Time :0:00 Categories : Vegetables Badams Jerry's Great Cooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 small yellow squash -- sliced 1/4 " thick 3 cloves garlic -- chopped 2 tablespoons olive oil 1/2 teaspoon Ancho Chili Powder -- salt to taste Heat oil in small saute frying pan. Toss in garlic and squash. Saute for less than 5 minutes. During last minute, add the Ancho Chili Powder. Note: the addition of chili powder was fantastic. These little baby yellow zuchinni look-alikes are so good. They don't have that 'squashy' taste. The dish smelled and tasted Chinese. Crisp and delicious!! Invented by Jerry Adams and taste tested by his picky wife who is not crazy (usually) about squash. This summer squash (a start was purchased at a garden center) is whole new take on what squash can mean! Yum.
