Guest guest Posted March 20, 1999 Report Share Posted March 20, 1999 * Exported from MasterCook II * Zucchini Corn Casserole Recipe By : Mary McDougall Serving Size : 6 Preparation Time :0:00 Categories : Mcdougall Side Dish Vegan Zucchini Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 To 4 Zucchini -- sliced 1/4 " thick 1 Onion -- sliced 2 Cups Frozen Corn Kernels 1 Cup Mild Mexican Salsa Place 1/2 cup water in a large pot. Add onion and saute briefly. Add zucchini, stir a few times, then cover and steam about 10 minutes. Remove from heat. Mix in corn kernels and salsa.
