Broccoli with Ginger

Amount Measure Ingredient -- Preparation Method

1 clove garlic -- minced

piece fresh ginger root -- 1/2 inch; grated

2 teaspoons vegetable oil

1 pound broccoli -- cut into florets

1 medium leek -- thinly sliced

- white part only

2 tablespoons vegetable stock

1 teaspoon tamari soy sauce

 

Saute ginger and garlic in oil for 1 minute. Add the broccoli,leek, and stock.

Toss together. Cover the pan and cook for 3 minutes. Remove the cover and

continue to saute until the vegetables are just tender, about 10 minutes. Mix

in the tamari and serve immediately.

Spicy Collards

Amount Measure Ingredient -- Preparation Method

1 pound fresh collards -- cut into strips

2 cups vegetable stock

3/4 cup chopped onion

1 clove garlic -- minced

1 tablespoon olive oil

1 tablespoon grated ginger root

1/4 teaspoon cayenne

salt and pepper -- to taste

 

Simmer the collards in the stock for 30 minutes, until the collards are

completely tender.

 

Saute the onions and garlic in the oil until the onions are transparent. Add

the ginger and cayenne and stir for one minute. Add the collards and stock, and

simmer until most of the liquid is evaporated, about 15 minutes.

Sunshine Carrots

5 medium carrots -- cut on bias into

- 1 inch chunks

1 tablespoon sugar

1 teaspoon cornstarch

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/4 cup orange juice

2 tablespoons margarine

 

Cook the carrots in boiling water, until just tender, about 20 minutes. Drain.

 

Mix the sugar, cornstarch, ginger, and salt. add the juice. Cook over low heat,

stirring until thick and bubbly. Boil 1 minute, then stir in the margarine.

Toss with the carrots.
