Add the broccoli,leek, and stock. Toss together. Cover the pan and cook for 3 minutes. Remove the cover and continue to saute until the vegetables are just tender, about 10 minutes. Mix in the tamari and serve immediately. Saute the onions and garlic in the oil until the onions are transparent. Add the ginger and cayenne and stir for one minute. Add the collards and stock, and simmer until most of the liquid is evaporated, about 15 minutes. Drain. Mix the sugar, cornstarch, ginger, and salt. add the juice. Cook over low heat, stirring until thick and bubbly. Boil 1 minute, then stir in the margarine. Toss with the carrots.
