These are from http://soyfoods.com/recipes and are pasta dishes. The only

soy in one is soyoil which does not seem soy enough for a website to promote.

Easy Day Vegetable Lasagna

1 tablespoon soyoil

8 ounces uncooked lasagna noodles

8 green onions -- chopped

1/2 teaspoon salt

1 cup sliced fresh mushrooms

1/4 teaspoon pepper

48 ounces low-sodium low-fat spaghetti sauce

1/2 teaspoon garlic powder

1/2 package low-fat firm silken tofu -- (10.5-ounce)

1/2 teaspoon oregano

1 10 ounces pa frozen chopped spinach

defrosted and drained

1 8 ounce pack fat-free shredded Mozzarella cheese

1 egg

 

Preheat oven to 350ø F. Spray 9x13-inch baking pan with non-stick

vegetable oil. Saut‚ green onions and mushrooms in soyoil. Add spaghetti

sauce. Set aside.

 

Combine tofu, spinach, egg and seasonings, and mix well. In baking dish,

begin with bottom layer of spaghetti sauce mixture, followed by uncooked

noodles, tofu mixture, noodles, and top with remaining sauce.

 

Cover pan of lasagna with aluminum foil. Bake for 45 minutes. Remove foil

and top with cheese. Bake, uncovered, an additional 15 minutes. Allow to

stand 10 minutes before serving. Yield 8-10 servings.

 

Option: layer one 16-ounce package of frozen vegetable medley between

layers of lasagna noodles or saut‚ 1 1/2 cups fresh vegetable combination.

 

Per serving (10 ounces): 274 calories, 19.8 grams protein, 39 grams

carbohydrates, 5.3 grams total fat, 3.3 grams saturated fat, 24 mg

cholesterol, 408 mg sodium.

One Pot Pasta

1 cup chopped onion

2 cloves garlic -- minced

2 cups zucchini

sliced in thin rounds

1 rounds cut in quarters

8 ounces mushrooms -- thinly sliced

(optional)

28 ounces undrained canned tomatoes -- pur‚ed in blender

1 3/4 cups water

1/2 cup dry TSP

1 tablespoon Italian herb seasoning

1/4 teaspoon red pepper flakes

1/2 teaspoon fennel seed -- crushed

2 cups small macaroni or shell pasta

 

There's no need to pre-cook the pasta in this easy recipe!

 

Saute the onion, garlic, zucchini and mushrooms in a nonstick skillet until

they are barely tender. (Add enough water to prevent sticking.)

 

Add the tomatoes, water, TSP, Italian herbs, red pepper flakes, fennel seed

and pasta. Bring to a boil, then reduce heat to medium low and cover.

Simmer for about 10 minutes, until pasta is tender and the liquid has been

absorbed.

 

Yield: 8 servings Serving size: 1 cup

 

Per serving: 159 calories, 1 g total fat (0.1 g sat fat), 10 g pro, 30 g

carb, 3.1 g fiber, 169 mg sodium, 0 mg cholesterol. Exchanges: 1-1/2

starch, 1 vegetable, 1/2 very lean meat

Pasta With Spaghetti Sauce

2 tablespoons soybean oil

1 cup diced onion

1 cup diced zucchini

1 cup diced red pepper

1 cup sliced button mushrooms

16 ounces spaghetti sauce

1/2 teaspoon Italian seasonings and salt

1/8 teaspoon pepper

4 cups cooked corkscrew pasta

 

Heat oil in large non-stick skillet over medium-high heat; stir in onion,

zucchini, pepper and mushrooms. Saut‚ until vegetables are crisp-tender.

Add spaghetti sauce and seasonings; mix well. Bring mixture to boil,

reduce heat and simmer 5 minutes. Stir in pasta. Makes 4 to 6 servings.

 

Per serving: 413 calories, 10.3 grams protein, 13.4 grams fat (29% calories

from fat), 64.9 grams carbohydrate, 0 mg cholesterol, 5.3 grams fiber, 841

mg sodium.
