Cook rice according to pkg directions. 2. In a medium nonstick skillet, heat the oil. Saute the celery and garlic until they just begin to soften, 1-2 minutes. Stir in the parsley and thyme; cook, stirring constantly, until the vegetables are softened, about 2 minutes longer. Add to the rice; toss to combine. POINTS per serving: 4 - - - - - - - - - - - - - - - - - - NOTES : If you're looking to boost this recipes nutrient content, stir in one cup chopped spinach when you add the parsley and thyme.
