Guest guest Posted March 24, 1999 Report Share Posted March 24, 1999 * Exported from MasterCook II * Grilled Vegetable Medley Recipe By : Susan Powter Serving Size : 6 Preparation Time :0:00 Categories : Grill Susan Powter Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Cup Lemon Juice 2 Tbs Olive Oil 4 Cloves Garlic -- crushed 2 Tsp Italian Seasoning 1 1/2 Tsp Spike Seasoning 6 Red Potatoes, Boiled Til Tender 2 Medium Zucchini, Sliced 1/4 " Thick -- lengthwise 2 Red Or Green Peppers -- seeded & Sliced Lenthwise Into 1/2 " Or 1 " Strips 2 Red Onions, Sliced Across The Grain Into -- 1/3 " pieces 1/2 Pound Mushrooms 1 Large Eggplant, Peeled And Sliced Into -- 1/2 " thick pieces To make marinade: Combine lemon juice, olive oil and seasonings. Pour over vegetables in a big bowl. Let marinate for at least one hour, longer if possible. Cook over hot coals approximately 10 minutes on each side. Serve over hot brown rice and pour remaining marinade over all.
