Guest guest Posted March 24, 1999 Report Share Posted March 24, 1999 * Exported from MasterCook II * Corn And Potato Chowder Recipe By : Susan Powter Serving Size : 6 Preparation Time :0:00 Categories : Susan Powter Chowder Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Cup Chopped Onion 1/2 Cup Chopped Red Bell Pepper 3 Cups Frozen Corn, Thawed 3 Cups Vegetable Broth 1/8 Tsp Cayenne Pepper 2 Medium Potatoes, Peeled, Cubed, Cooked Til Tender 2 Tbs Chopped Parsley 1 Tbs Chopped Green Onion Saute the onion and red pepper in a pot lightly sprayed with oil until the onions are very limp. Put 2 cups of corn and 1 cup of the broth in a blender and process until smooth. Add the puree to the pot of onions and peppers. Add the cayenne pepper, potatoes and remaining corn and broth. Heat through, sprinkle with parsley and green onion on top, and serve.
