For those of you who do not have MC, you can format your recipes using the following keywords so they can be imported. If you are interested in details of how to use this format, let me know and I'll send you the info. NAME: Corn and Black Bean Burgers SERVES: COMMENTS: Serve on whole wheat buns with salsa, red onions, tomato or your traditional burger toppings. TAGGED INGREDIENTS: 2 tsp. olive oil 1 cup chopped onion 2 Tablespoons spicy barbecue sauce 1 cup frozen corn, thawed 1/2 cup cooked rice - (may be increased up to 1 cup) 1 15 oz. can black beans, drained and rinsed 1/2 cup toasted walnuts or pecans - (ground to a coarse powder) 1 cup plain bread crumbs salt DIRECTIONS: Heat oil in skillet over medium heat. Add onion and cook until edges start to brown, about 5 minutes. Add corn and barbecue sauce. Cook, stirring, for a few minutes to blend flavors. Remove pan from heat. Place corn mixture, rice, and beans in a food processor. Pulse several times until ingredients are blended, but mixture is still chunky. Transfer mix to a large bowl. Add nuts and bread crumbs. Mix with a large spoon until thoroughly combined. Season with salt to taste. Divide and shape mixture into 10 small burgers or 6 large ones. Add more bread crumbs if mixture does not hold together well. Prepare grill or preheat broiler. If using a grill, place patties on vegetable grid. If broiling, place patties on pan lined with lightly oiled aluminum foil. Grill over medium hot coals, or broil 3 to 6 inches from heat until lightly browned -- 4 to 6 minutes each side.
