Maggie: Here's two pancakes recipes I came up with. The first one was posted

by Catherine and the second by Pat. FYI to all: Here's what I've been doing

with all the recipes posted on the list: I have made a cookbook in Mastercook

called, of all things, " Veg-Recipes " and I import *all* (except my own) the

recipes posted into it a couple of times a week. So, if anyone is every missing

a recipe posted here, I will probably have it. BTW: Another way to find

previous postings: Go to the ONElist site, enter your e-mail address & password

and when it shows the lists you belong to, click on " Veg-Recipes " and then

choose " view archives " . The archives are *private*, and only Veg-Recipes

rs can view them. Take care! Thanks for all the recipes!

Multigrain Buttermilk Pancakes (No-Tofu)

 

Recipe By : Sharon Sassaman Claessens, NO-TOFU VEGETARIAN COOKBOOK

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/2 cups Multigrain Pancake Mix (no-tofu)

1 egg

1 tablespoon canola oil

1 1/4 cups buttermilk -- plus

1/4 cup extra buttermilk -- to thin

lowfat 1% milk -- may be substituted

 

1) Place mix in a large bowl. Beat egg lightly with the oil in a small bowl. Add

egg mixture and enough buttermilk to the mix to make a creamy batter.

 

2) Cook pancakes on a lightly oil, nonstick griddle or skillet, turning when

buttles appear on the serve.

 

VEGAN PANCAKE - omit egg and milk and use 2 tablespoons oil and 1+1/4 to 1+1/2

cups apple juice or other liquid.

 

EACH SERVING: 265 cals, 6g fat: 22% cff estimated by mastercook and

kitpath 3/99 Veg-Recipes , eat-lf
