Green Rice; Toasted Pecan Pilaf

1 tablespoon butter or margarine

1 clove garlic -- minced

3 cups cooked rice -- cooked in broth

2 tablespoons finely chopped green onions

2 tablespoons chopped fresh parsley

1/4 cup grated Parmesan cheese

 

DIRECTIONS: Melt butter in large skillet over heat. Add garlic; saute 2 to 3

minutes. Add rice; cook until thoroughly heated, about 5 minutes. Stir in green

onions, parsley and Parmesan cheese. Makes 6 servings.

1 tablespoon butter

1 medium onion -- finely chopped

1 cup thinly sliced Shiitake mushrooms

or button mushrooms

1 clove garlic -- minced

1 medium red or yellow bell pepper -- chopped

3 cups cooked rice -- cooked in broth

3/4 cup coarsely chopped toasted pecans

1 tablespoon chopped fresh thyme

1/2 teaspoon salt

1/4 teaspoon ground black pepper

 

DIRECTIONS: Heat butter in large skillet over medium-high heat until hot.

 

Add onion, mushrooms and garlic. Cook and stir 3 to 5 minutes or until onion is

tender. Add red bell pepper cook and stir 1 to 2 minutes. Add rice, pecans,

thyme, salt and pepper. Cook and stir 2 to 3 minutes or until thoroughly

heated. Makes 6 servings.

 

PREPARATION - Cook rice in beef or mushroom broth.

 

To toast pecans, place on baking sheet; bake 5 to 7 minutes in 350-degree oven,

or until pecans are just beginning to darken and are fragrant.
