Guest guest Posted March 26, 1999 Report Share Posted March 26, 1999 * Exported from MasterCook * VEGAN CAESAR SALAD Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : " Post " Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons Dijon mustard 3 tablespoons nutritional yeast flakes 2 tablespoons blanched and ground almonds 3 cloves garlic -- minced 1/4 cup water 3 tablespoons fresh lemon juice 2 tablespoons soy sauce 1 tablespoon olive oil -- (optional) 1 large head romaine lettuce -- torn into large -- pieces 1 1/2 cups prepared croutons In a small mixing bowl, combine mustard, yeast flakes, almonds, and garlic to make a paste. Whisk in water, lemon juice, soy sauce, and olive oil if desired; set aside. Alternatively, combine all ingredients in a food processor or blender and process until smooth. In a large salad bowl, combine romaine lettuce and croutons. Add dressing and toss to coat. Serve immediately. MC-Busted by Karen C.
