Fried Rice

2 tablespoons lime juice

1 tablespoon lower-sodium soy sauce

4 ounces firm tofu -- in small cubes

1/4 cup chopped carrots

2 teaspoons dark sesame oil

Lime wedges -- (optional)

2 cloves garlic -- minced

2 teaspoons minced fresh ginger

1/4 cup sliced snowpeas

1/4 cup sliced celery

2 green onions -- sliced

2 cups cooked rice

 

Combine the lime juice and soy sauce and pour over the tofu. Set aside

until needed.

 

Blanch the carrots in boiling water for 2 minutes. Drain well and set

aside. (If carrots are cut in small matchsticks, you do not need to blanch

them.)

 

Heat the oil in a nonstick skillet and briefly saute the garlic and ginger.

Add the tofu and marinade, carrots, snowpeas, celery and green onions.

Cook, stirring, over high heat about 1 minute. Add the rice and continue

to cook and stir until tofu is beginning to brown, about 3 minutes. Serve

with lime wedges to squeeze over the rice at the table, if desired.

 

Yield: 3 servings Serving size: 1 cup

 

Per serving: 264 calories, 6 g total fat (1.0 g sat fat), 9 g pro, 44 g

carb, 3.4 g fiber, 205 mg sodium, 0 mg cholesterol. Exchanges: 2-1/2

Amount Measure Ingredient -- Preparation Method

1 cup brown rice or white rice

1/4 cup soy grits*

2 1/2 cups water

1/2 teaspoon salt -- (optional)

 

Gritty Rice is moister and stickier than plain rice, making it good in

casseroles and croquettes. Leftovers freeze well.

 

Combine all ingredients in a medium pot. (Be sure it's large enough, as

the soy grits foam a little.) Bring to a boil. Reduce heat as low as

possible, cover tightly, and let cook for 45 minutes (20 minutes if using

white rice). Do not lift the lid while the rice is cooking!

 

Remove pan from heat. Allow to sit, covered, for 10 minutes before serving.

 

*Most soy grits are small flakes. If you have large chunks, you will need

to use brown rice and 2-3/4 cups water to be sure the grits cook completely.

 

Yield: 7 servings Serving size: 1/2 cup

Gritty Rice Crust

1 1/2 cups prepared Gritty Rice

(see separate recipe)

2 egg whites -- lightly beaten

 

This makes a good crust for a savory filling. If you'd like, add a

teaspoon of dried herbs or some grated soy cheese to the crust.

 

Preheat the oven to 400ø.

 

Combine the Gritty Rice and egg whites in a mixing bowl. Press onto the

bottom and up the sides of a nonstick or lightly oiled 9 " pie pan.

 

Bake at 400ø for 15 minutes, until set and starting to turn golden. Remove

from oven and fill with a savory pie or quiche filling and bake according

to the recipe.

 

Yield: one 9 " crust Serving size: 1/8 of crust

 

Per serving: 49 calories,1 g total fat (0.1 g sat fat), 2 g pro, 8 g carb,

0.9 g fiber, 14 mg sodium, 0 mg cholesterol. Exchanges: 1/2 starch

Veggie Rice Squares

Amount Measure Ingredient -- Preparation Method

1 cup chopped onions

3/4 cup shredded zucchini

3/4 cup shredded carrots

2 cups prepared Gritty Rice

(see separate recipe)

1 teaspoon dried basil

1 teaspoon dried oregano

1/4 teaspoon black pepper

2 egg whites -- lightly beaten

1/2 teaspoon Tabasco -- (optional)

2 ounces shredded Cheddar-style soy cheese

 

Preheat the oven to 350ø.

 

Saute the onions, zucchini and carrots in a nonstick skillet until tender.

 

In a mixing bowl combine the Gritty Rice, basil, oregano, pepper, egg

whites, Tabasco and cheese. Stir in the sauteed vegetables.

 

Spread the mixture evenly in a 9 " square baking dish, coated lightly with

vegetable oil spray. Bake at 350ø for 30 to 35 minutes, until center is

set and edges are starting to turn golden. Let sit a few minutes before

cutting into 9 squares.

 

Yield: 9 servings Serving size: 1 square

 

Per serving: 85 calories, 2 g total fat (0.2 g sat fat), 4 g pro, 13 g

carb, 1.8 g fiber, 73 mg sodium, 0 mg cholesterol. Exchanges: 1/2 starch,

1 vegetable

 

Cheesy Rice Squares ­ Make as above, but use only the Gritty Rice, egg

whites and soy cheese. This is especially good for children who don't like

their foods mixed together.

 

Per serving: 72 calories, 2 g total fat (0.2 g sat fat), 4 g pro, 10 g

carb, 1.1 g fiber, 69 mg sodium, 0 mg cholesterol. Exchanges: 1/2 starch
