I'm not much of a slaw fan, but I *loved* the " cilantro cole slaw " I had at an Atlanta restaurant, NAVA. It was a vinegar/oil type base too, was spicy, and had lots of cilantro. I called & asked them if they would fax me the recipe & they said they would, but I never rec'd it. I guess I should call back in case they just got busy and forgot. Brenda! -- Do you have any tricks or tips for getting recipes from restaurants you could share? P.S. Slaw ( Salvadoran) - Marion Cunningham Recipe By : The Supper Book - Marion Cunningham Serving Size : 6 Preparation Time :0:00 Categories : Vegetables Salads & Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup white vinegar 6 tablespoons vegetable oil 4 cloves garlic -- finely chopped 1/3 cup ice water 1/2 teaspoon Tabasco sauce 1 1/2 tablespoons chili powder 1 1/2 teaspoons salt 1 head savoy cabbage -- chopped Combine the garlic and the ice water. Put the vinegar, oil, garlic in ice water, Tabasco, chili powder, and salt in a large bowl. Mix very well. Add the cabbage and toss and stir until it is well coated with the dressing. Cover and chill and use as needed. This keeps well. NOTE: " There are lots of Salvadoran restaurants in Los Angeles that serve papusas, slightly plump little tortillas filled with spicy meat or cheese. This is the peppy slaw that goes along with them. Whisk in oil and check for seasoning. Toss with cabbage and scallions.
