I was already a vegetarian, but I wanted to see if this diet would help some health problems. This recipe was really tasty and filling, although since I used tomatoes with no added salt, I did have to add some. Not that much, though. McDougall, M.D. Serving Size : 6 Preparation Time :4:00 Categories : Main Dish Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c dried kidney beans 5 c water 2 ea yellow onions -- chopped 1 ea green pepper -- chopped 2 stalks celery -- chopped 2 cloves garlic -- crushed 1 c tomato sauce 15 ozs stewed tomatoes 4 tbsps chili powder 2 tsps ground cumin 1/4 tsp crushed red pepper 1/8 tsp cayenne Place the beans and water in a large pot. Bring to a boil, cover, reduce heat, and simmer for 2 hours.
