Yes, I am test driving McDougall's 12 day plan. I was already a

vegetarian, but I wanted to see if this diet would help some health

problems. This recipe was really tasty and filling, although since I used

tomatoes with no added salt, I did have to add some. Not that much,

though.

Spicy Chili Beans

 

Recipe By : The McDougall Program, John A. McDougall, M.D.

Amount Measure Ingredient -- Preparation Method

2 c dried kidney beans

5 c water

2 ea yellow onions -- chopped

1 ea green pepper -- chopped

2 stalks celery -- chopped

2 cloves garlic -- crushed

1 c tomato sauce

15 ozs stewed tomatoes

4 tbsps chili powder

2 tsps ground cumin

1/4 tsp crushed red pepper

1/8 tsp cayenne

 

Place the beans and water in a large pot. Bring to a boil, cover, reduce heat,

and simmer for 2 hours. Add the remaining ingredients and cook an additional 2

hours.

Per serving: 271 Calories; 2g Fat (5% calories from fat); 17g Protein; 51g

Carbohydrate; 0mg Cholesterol; 511mg Sodium

 

Serving Ideas : Serve with brown rice.
