Hi, Greg. You might try one of my favorite easy cookbooks. Contrary to

most " quick and easy " cookbooks (they lie!), this one really is.

 

_Vegetarian Express_ , by Nava Atlas and Lillian Kayte

 

These are easy enough, quick enough and can easily be halved for one

person. They even give you a shopping list and menu ideas that actually

work and don't clutter up the pages w/ eye pollution. ;-)

 

You can also ask the more experienced (and talented) cooks here on the list

for help in reducing recipes. (I'm not one of them. I'm experienced, but

far less than talented. ;-)

I was interested in this thread because my son is in college and has

limited time to cook. Just thought you might like to know I found this

Price is $12.76. Looks good, I think I will get it for him.

 

As far as reducing recipes goes, you could use the scaling feature in

Mastercook. Type the recipe in as is and then ask it to scale by half or

quarter or whatever.
