Guest guest Posted April 3, 1999 Report Share Posted April 3, 1999 * Exported from MasterCook * Quick Meatless Stroganoff Recipe By : Linda McCartney Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons margarine 2 whole onions -- sliced 2 tablespoons flour 2/3 cup vegetable stock 1 1/4 cups white wine 1/2 pound mushrooms, whole -- cut in half 2 tablespoons olive oil 1/2 pound vegetarian steak chunks 1 1/4 cups sour cream freshly ground black pepper parsley -- chopped Heat the margarine in a saucepan and cook the onions, covered, until soft. Add the flour, mixing it in well, then stir in the stock followed by the white wine. Add the mushrooms. Simmer gently uncovered, for about 5 minutes, stirring occasionally. Meanwhile, heat the oil and toss the steak chunks until browned all over. Mix them into the mushroom sauce. Stir in the sour cream, season generously with pepper, and cook very gently (without boiling) for 6-8 minutes.
