Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 15.5 oz cans black beans (rinsed & drained) -- mashed 1/2 cup chopped tomato 1/2 cup chopped cucumber 1/3 cup sliced ripe olives 1/4 cup chopped green onions 1 tablespoon olive oil 1 teaspoon Greek seasoning 1 4 oz pkg tomato-basil feta cheese -- crumbled Spread beans in a shallow 9-inch dish. Combine tomato and next five ingredients and toss gently. Sprinkle tomato mixture over beans. Top with crumbled feta cheese. Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small onion -- diced 3 cloves garlic -- minced 3 tablespoons olive oil 1/2 pound fresh okra, cut into 1/4 " slices 1 medium tomato -- seeded & diced 1/4 cup water 1/2 teaspoon salt 1 tablespoon red wine vinegar 1/8 teaspoon dried crushed red pepper 1/4 teaspoon freshly ground black pepper 1 tablespoon capers Saute onion and garlic in hot oil in a nonaluminum skillet until tender; add okra and tomato, and saute 1 minute. Stir in 1/4 cup water and salt; reduce heat, and simmer, stirring occasionally, 20-25 minutes or until liquid has almost evaporated. Stir in vinegar, red pepper, and black pepper. Cook, stirring constantly, 2 minutes or until thickened. Remove from heat, stir in capers. Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 oz pkg light cream cheese -- softened 1/2 cup light sour cream 1/4 teaspoon dried oregano 1/4 teaspoon garlic powder 1/4 teaspoon ground red pepper 3/4 cup pizza sauce 1/2 cup chopped vegetarian " pepperoni " * 1/4 cup chopped green onions 1 cup shredded mozzarella cheese tortilla chips or crackers Beat first 5 ingredients at medium speed with an electric mixer until well-blended. Spread in a lightly greased 9-inch pie plate. Spoon pizza sauce evenly over top, sprinkle with chopped veggie " pepperoni " , and top with green onions. Bake at 350 ° F for 10 minutes. Sprinkle with mozzarella cheese, and bake 10 more minutes or until cheese melts. Serve with tortilla chips or crackers. - - - - - - - - - - - - - - - - - - NOTES : Yves is the brand I use. Copycat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 ounce sun-dried tomatoes -- (dried, not in oil) 2 ounces green onions -- cut in 1/4 " slices 1 1/2 ounces mushrooms -- cut into 1/4 " slices 1 cup mayonnaise 1 cup sour cream 1 1/2 ounces Asiago cheese -- shredded Reconstitute sun-dried tomatos in hot water. Clean, rinse and slice green onions. Rinse and slice mushrooms. Squeeze water out of the tomatoes, then julienne into fine strips. All water must be removed from the tomatoes and they must be added last or the cheese dip with discolor. Combine all ingredients in food processor, except tomatoes. Blend well at low speed.
