Guest guest Posted April 6, 1999 Report Share Posted April 6, 1999 * Exported from MasterCook II * Cath's Easy Bean Salad Recipe By : Catherine Leslie Serving Size : 8 Preparation Time :0:00 Categories : Salad Vegan Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 15 Oz Can Black Beans -- drained/rinsed 1 15 Oz Can Pink Beans -- drained/rinsed 1 15 Oz Can White Beans -- drained/rinsed 1 15 Oz Can Corn -- drained/rinsed 2 Cups Roma Tomatoes -- chopped 1 Large Yellow Onion -- finely chopped 1 Large Green Pepper -- finely chopped 1/2 Cup Salsa 1/2 Cup Red Wine Vinegar 2 Cloves Garlic -- crushed Freshly Ground Black Pepper -- to taste Combine the beans, tomato and chopped onions and green pepper in a large bowl, mixing gently as to not break up the beans. Combine the salsa, red wine vinegar, crushed garlic and freshly ground black pepper in a small bowl. Whisk together and pour over bean mixture, folding gently.
