Guest guest Posted April 9, 1999 Report Share Posted April 9, 1999 * Exported from MasterCook II * Wild Rice-Orange Pancakes Recipe By : Vegetarian Times Low Fat and Fast Serving Size : 8 Preparation Time :0:00 Categories : Pancakes Wild Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Cup Cooked Wild Rice -- about 1/4 c raw rice 3/4 Cup Buttermilk 1/2 Cup Fresh Orange Juice 1 Egg -- lightly beaten 2 Tbs Honey Or Maple Syrup 1 Tbs Canola Oil 1 Cup Unbleached White Flour 1 Tsp Baking Powder 1/2 Tsp Ground Cinnamon 1/4 Tsp Ground Nutmeg 1/4 Tsp Salt In a medium mixing bowl, combine rice, buttermilk, juice, egg, honey or maple syrup and oil. In a small mixing bowl, combine remaining ingredients. Add dry mixture to wet ingredients, stirring just until moist. Heat a large nonstick skillet or griddle over medium heat. Spoon about 1/4 cup batter onto skillet to make a 4 inch pancake. Repeat with remaining batter. Cook until bubbles on surface of pancakes begin to subside and bottoms are golden brown, about 1 to 2 minutes. Turn pancakes and cook until bottoms are golden brown, 1 or 2 minutes more. Makes about sixteen 4 inch pancakes; 8 servings.
